Good morning and happy President's day! Wish M had the day off to hangout with us :( We were so excited of the possibility of some snow yesterday but it was a big disappointment :( Nothing stuck to the ground and it looks like Richmond got all our snow! Most people who hear we moved here from FL are quick to say how lucky we are that it has been a mild winter....ummm I didn't give up 80 degree winters for mild winters, I wanted snow!
Anyhoo we have been doing really well sticking to our menus each week and only buying what we need at the store. Here is our menu for this week
Sunday: M's Meatloaf and Broccoli
Monday: M's Spaghetti
Tuesday: Pizza Roll Ups from Lynsey
Wednesday: Slow Cooker Beef Stew
Thursday: Skillet Chicken
Friday: Out!
Here is the recipe for the Chicken Divan I made the other week, it was really good!
Makes 4 servings, 15 min prep
4 boneless, skinless, chicken breasts halves
4 cups broccoli florets
2 10 1/2 oz cans of cream of chicken soup
1 cup Mayo
1/2 to 1 tsp. curry powder
Hot cooked rice (optional)
1. place chicken breasts in slow cooker, top with broccoli
2. combine soup, mayo, and curry powder together in a small bowl. Pour over chicken and broccoli
3. cover and cook on high 3 to 4 hours or until chicken is tender.
serve over rice if desired
