Log Cabins and Mountains

It's no secret that M and I get a little homesick every summer not being in Richmond to be able to go to the River with our family and friends...however as we did in Florida we have found a place here in Tennessee that we've fallen in love with!

If you don't know where The University of the South is your missing out! Sewanee is probably one of the prettiest places I have ever been to. We rented a little log cabin with our friends John, Kristy, and Jack from Orlando and had a blast being up on the mountain.

If your ever driving to Nashville via Chattanooga you must make a stop in Sewanee :)

Getting To Know You

I was tagged by the wonderful Amy over at Forever 29 to answer some questions and tell y'all a little bit about myself!

11 Things About Me


1. I am obsessed with being on time, if I'm not on time I'm early which to me is better than being late


2. I only applied to 1 college (ECU) and got in the day after Christmas so I didn't apply to anymore


3. In high school I drove a yellow station wagon that people called the banana 


4. In 6th grade I was in the Broadway production of Joesph and The Amazing Technicolor Dreamcoat


5. I went to an all girls camp and miss it every summer!


6. M and I met while life guarding 12 summers ago


7. I love being a boy mom, in fact I spent Sunday night catching frogs for Hudson


8. I am obsessed with bug spray...skitters are my enemy!


9. I grew up calling my Godparents aunt and uncle and still call them that to this day, they are literally like my 2nd set of parents.


10. Being together with my family either at the river or in Canada is pure joy for me


Amy came up with 11 questions for me


1. How Often Do You Make Your Bed? Honestly maybe 2x a week, sometimes I get on a roll and do it everyday. 


2. What's Your Favorite Holiday?  That is hard! It is probably a toss up between Thanksgiving and Christmas, Thanksgiving for the food and Christmas for the family time!


3. Dog/Cat/Neither/Other? We have a dog and a cat, I am a dog person and M is a cat person


4. Are You A Morning Person or A Night Owl? Can I say I'm a midday person?


5. Are You A Coffee Drinker? Not at all! I drink a diet coke in the morning instead of coffee.


6. To Which Magazines Do You Subscribe To? Southern Living


7. What Is The Least Favorite Job You've Had? Probably when I used to babysit for these twins in college, their mom dated my back neighbor, she never paid me well and the kids were horrible! I even had to take them trick or treating one year...if you know anything about ECU than you know Halloween is a huge deal!


8. Who Is The Last Person You Talked To On The Phone? My mom, to get an update on the forest fire near our family's cottage...very scary when your talking about an over 100 year old structure with all your family history burning down!


9. What Would You Want Your Last Meal To Be? Steak, mashed potatoes, and asparagus


10. What Is The Most Adventurous Thing You've Done? I learned how to barefoot one summer with my cousins, I think I was 12 or so


11. What Beauty Product Could You Not Live Without? My Neutrogena concealer

Express Yourself

When I started this blog it was a way for us to keep our families up to date on our life and Hudson. Since then it has turned into my journal. This is a place where I can express myself, my feelings, and yes pictures of Hudson.

Now I don't post everything on here, I do have some sort of a filter but for the most part I try and tell it like it is. Lately things I've posted or said have been taken out of context and turned around to mean different things to different people and this bothers me.

My words are mine and mine alone and they aren't meant to offend or even upset my readers. However I will continue to journal what is going on in my life whether good or bad. 

So take me as I am or not at all...

Sorry I have been so MIA this past week! M's whole family came to town and just left today so I am still detoxing from our fun filled weekend!

Oh, and did I mention that we have more friends coming this weekend! Let the unpacking and repacking begin!

So What Wednesday

This week I'm saying So What If...

  • I really want M to bring me home some Mike & Ikes...hint hint
  • I'm actually not super excited about going to the Opry on Friday, I know I should be and want to be but I'm just feeling blah
  • M and I will actually get a date night up in Nashville on Saturday...dinner recs anyone?
  • Hudson stayed in his pj's all day yesterday
  • The next 2 weekends are jammed pack with family and friends and it makes me super excited and super stressed out at the same time!
  • I'm ready for H to poop in the potty on a regular basis...this sporadic thing is for the birds

Menu Monday

Sunday: BLT & Corn on the Cob, this has become a summer staple around these parts

Monday:  M's Chicken Parm

Tuesday:  Mexican Chicken (recipe below)

Wednesday:  Taco Salad, another summer staple

Thursday:  Either leftovers or Hamburgers

Friday:  Out to dinner with the inlaws :)

Mexican Chicken Recipe


Ingredients:
3-4 chicken breasts boiled & cut into pieces
1 can cream of mushroom soup
1 can cream of chicken soup
1 can rotel
1-2 cups cheddar cheese
1 package small corn tortillas ( i like flour instead but that's just me)

Directions:
tear tortillas into small pieces and line the bottom of a baking pan
mix together the soups, rotel, & chicken and pour on top of tortillas
top with cheese
bake at 350 for 30 minutes

This is really great as leftovers also!

Happy 4th of July!

Happy Birthday to the USA! We had a great lazy day at home with Daddy :) Had fun at a cookout with friends and then got to watch the city fireworks from our street! It was hard sending M off this morning :(
