Happy Birthday Hudson

Happy Happy Birthday to the BEST BOY in the whole world! We are so blessed to be your parents and fall more in love with you everyday! As much as I don't want you to grow up I cannot wait to see what this next year has in store for you!

Menu Monday and A Recipe





I am linking up with Rachel over at In No Simple Language for Menu Monday! Here is what we are eating this week...

Monday: Spring Mix Salad w/toasted Almonds
Tuesday: Taco Tuesday
Wednesday: Hudson's Birthday Dinner - He chose Pizza
Friday: Dinner at a friends' house

So we aren't eating super healthy this week which means I will be working out extra hard!

The other week Erin posted an amazing recipe for Spicy Sausage Pasta that M and I just had to try! It was amazing! Here is the recipe....you must make this!

1 tbsp olive oil

1 lb smoked sausage

1.5 cups diced onion

2 cloves garlic, minced

2 cups low-sodium chicken broth

1 (10 oz) can Ro-Tel tomatoes and green chiles, Mild

1/2 cup heavy cream

8 oz penne pasta

1/2 teaspoon salt and pepper, each

1 cup Monterey Jack cheese, shredded

1/3 cup thinly sliced scallions



1. Add olive oil to an oven-safe skillet over medium high heat until just smoking. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.



2. Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.



3. Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese and sprinkle with scallions. Broil until cheese is melted, spotty brown, and bubbly.

Since Hudson's 4th birthday is fast approaching I thought it only fitting to flashback to his 1st birthday. I still cannot believe he is going to be 4, where did my little bald baby go???
