Warmer Weather Makes For A Bad Blogger

Ugh I have been such a bad blogger! The amazing weather we have been having here in TN has overtaken my brain! All I want to do is be outside with my boys! We have been hitting up the Discovery Center a couple times a week to walk the trail and play on the playground. We even had a picnic with friends yesterday, of course I took zero pictures!

Life has also been busy busy! M and I got to go to Gaylord Opryland for dinner Monday night and it was A-M-A-Z-I-N-G! If you find yourself in the ginormous hotel that is Opryland please please please go to Ravello you won't leave hungry!

Tuesday H had his 3 year check-up, how is my baby 3??? My little preemie is finally out of the 25th percentile for weight and up to the 75th! So all of my "he isn't eating enough" thoughts are clearly wrong! He is also in the 76th percentile for height which we pretty much knew. I love our new pediatrician and am so happy to finally have a doctor that listens to my concerns and does something about them!

Hanging out at the Discovery Center!

This morning we went back to the Orthopedic Surgeon's office to have Hudson's cast removed! At first he didn't want them to take it off but he soon relented and loved the saw! He then had some more xrays taken of his arm and they were all clear! Loved our doc here as well and she and I both joked that we hoped we never had to see each other in her office again!

P.S. If you don't have a team to root for tonight please cheer for the VCU Rams as they take on Wichita State!

Menu Monday and Shrimp & Grits Recipe!

Linking up with Rachel at In No Simple Language today for Menu Monday!

Sunday:  Orzo with Chicken, Andouille, and Soy Beans
Monday:  Work Dinner at the Opryland with M! H is going to the amazing Rachel's house...who already has 3 boys of her own!
Tuesday:  Crockpot Chicken Tacos from Lynsey's blog!
Wednesday:  Hot Turkey Sandwiches with a Salad
Thursday:  Chicken Ceaser Salad
Friday:  Steaks with Broccoli
Saturday:  Out

Here is the Shrimp & Grits recipe from last week! It was so good we made it again for breakfast on Saturday with come changes!

Recipe from Kevin and Amanda
2 cups water
2 chicken bouillon cubes or 2 tsp chicken bouillon granules
2 tablespoons butter
1/2 cup quick grits
1 cup sharp cheddar cheese, shredded

1 pound shrimp, peeled and deveined, without tails
cajun seasoning
4 slices thick cut bacon
2 teaspoons fresh lemon juice
1/4 cup thinly sliced scallions
1 garlic clove, minced

Arrange bacon on a cooling rack (like for cookies) and set the rack on a sheet pan (something with a lip all the way around). Place the bacon in a cold oven, then turn the oven on to 400 degrees F. Cook the bacon for 15 mins on each side, or until done. Chop into 4 slices into bite-sized pieces and reserve the bacon grease from the bottom of the pan.

In a medium saucepan, bring water, bouillon, butter and grits to a boil. Reduce heat to low and simmer for about 7 mins, until grits and thickened and tender. Remove from heat and stir in cheese.

Add 1-2 tablespoons of the bacon grease to a medium skillet over medium high heat. Season the shrimp with plenty of cajun seasoning. Add the shrimp to the skillet and cook until the shrimp turn pink, about 1 minute per side. Lower the heat to medium and add the bacon scallions, garlic, and squeeze in some lemon juice. Cook for another 1-2 minutes until the garlic and scallions are softened and the shrimp are done.
Serve the grits in bowl and top with the shrimp. Enjoy!
Makes 2 servings.

Our changes for Saturday were minor, we didn't use the chicken stock which cut down on the salt!

And this is how we are feeling this morning after Daylight Savings time!

FlashBack Friday: Where We've Lived

M and I have been married for almost 6 years and we have lived in 6 different places! I thought I would recap all the places we have lived, I couldn't find a picture of our favorite house in Williamsburg though :( Enjoy!

When we 1st got married I was living with my friend Clair, M moved in and we lived there for 2 months.

Our 1st house in Williamsburg was interesting...we had had a house but the renters went to the owner and asked to stay even though we had a contract! This was the last thing available on short notice before M started B School. It had shag carpeting, orange kitchen countertops, washer & dryer in the kitchen, and it backed up to a restaurant parking lot! It was small but we survived!

This is where the picture of our 2nd place in W'burg should go but alas I cannot for the life of me find a picture...the google maps picture is of the big magnolia tree in front of the house! This was our favorite house, we would both move back to that house in a heart beat!

In between moving out of our W'burg house and moving to Orlando I lived at my parents river house, M was in Thailand doing an internship.

My dad and I in front of our 1st house in Orlando. I rented this house sight unseen, literally drove into town straight to the house, signed the papers, and the movers showed up the next day! I had 3 weeks to get the house set up while M was still in Thailand. We loved the location of this house but the layout was horrible, all the windows needed to be replaced, and none of the doors went all the way to the floor!

We purchased our 1st home in '09 when we thought the market was at its lowest :( While we missed being in the city our neighbors really made up for that! We also loved the 3 community pools, tennis courts, and walking trails!

Here we are today, renting again and downsized into a town house. Sometimes the space feels big and sometimes it doesn't but we are enjoying it so far!

Check back next year because I am sure we have another move in our future!

Weekend With Grandparents

We had a great weekend with M's parents! With crazy weather here on Friday we weren't sure they would make it, but they were only delayed about an hour.

Saturday we didn't do too much, we had an amazing brunch at Goodness Gracious Cafe, seriously if you live here in M'boro you have to go! Afterwords we just hung around the house and took naps. We went to an early dinner at Longhorn (1st time back at a Darden restaurant since M quit) which was great and then shopped a little.

Sunday we got up early and headed over to Franklin, with a stop at Krispy Kreme we were ready for some shopping! We walked around downtown and then went to the mall. That afternoon I was lucky enough to find the VCU game on tv so we all watched them beat George Mason!

M and I got to have a little date night last night too which was great! We saw Safe House, it was amazing! Ryan Reynolds and Denzel are amazing in it! Go see it!

The Lindseys left early this morning and we already miss them! Thanks for the fun and birthday presents!

Meeting Blog Friends!

This past weekend there was a big/little blog conference here in Nashville called Blissdom. While I did not attend Blissdom I was excited to here some of my blog & twitter friends were planning a brunch meetup!

We went to the Copper Kettle in Nashville, it was really yummy! There desserts were to die for :) This was my 1st time driving into the city by myself and only 2nd time since we moved here! Let me tell you, the drive was beyond worth it!

While I didn't know everyone there it was as if we had all been friends for years! We talked for over 2 hours and probably could have talked all day if allowed. It was one of the best days I've had here sans M & H.

Since moving here in November I have been trying to meet people, I joined an awesome MOPS group which helped :), and through the world of blogging and twitter I now feel like I have made some great new friends! (hope they all feel the same ;-) !)

Lauren with Claire, Annie, AP, Laura, Moi, Jen, and Amber with Abby

A big thanks to these awesome ladies for letting me join them! Hope we can do it again soon :)
I am now off in a break between the storms to find some milk and mike & ikes :)
